I was browsing the Internet this morning looking for a recipe and excuse to use my donut pan again! I will work on improving my photo quality I promise! Just have to convince the guy to let me use our DSLR and promise not to get food on it! You can only get a certain quality on a smart phone and fluorescent lit kitchen!

I have made baked donuts two other times before and they both turned out kind of dense. Well the first time I made vanilla donuts with AP Flour, they felt okay texture wise but were not flavorful enough for me. Then I made some cinnamon baked donuts with whole wheat flour…blah way too dense and bread like.
So this morning I was on a mission to find a fluffy cake donut because I didn’t have any yeast in the house. I came across these on Pinterest and couldn’t resist. I was so excited until I read that they were fried. But for the sake of research, of course, I decided to make them and then another day I would try to tweak the recipe and make them healthier. (I know you are all looking forward to that). At least they are made from scratch and not store bought right? So off I went to fry some donuts and donut holes and the end result was delicious! Key Lime Pie is personally one of my favorite desserts, so this slightly tart kick of lime mixed with the sweet chocolate icing was perfect! (and I didn’t even add the full 3 tbsp of lime zest, more like just 1 tbsp because I was tired of zesting with a growling tummy!)
